Green Monster Smoothie

Green Monster Smoothie (Serves 2):

1 Banana

1 Cup Almond Milk

1 Cup Kale (destemmed)

1 Cup Baby Spinach

1 tbsp of Peanut butter

1 tbsp Flaxseed

1/4 tsp Vanilla Extract

Pinch of Ground Cinnamon

2 tbsp Hemp Protein Powder

3-4 Ice Cubes

*Add all ingredients into your blender and blend until smooth

 

As all you mamas out there know, toddlers tend to fluctuate in their eating patterns. One week they cant get enough food and the next… they could care less to eat. My littlest boy, Luke, is currently in the later phase of this cycle so my biggest concern is to make sure he is getting the proper nutrients to help feed his growing body.  Cue in the the amazing Green Monster Smoothie originally adapted from the Oh She Glow Cookbook. Packed full of folate (great for pregnant moms) , iron, fibre, protein, omega 3 fats, and a multitude of vitamins including K, C, A, E, B1, B2, B3 and B6, this smoothie is the perfect kick start to your day!

I always try to get my boys to help out in the kitchen. Not only is it a great opportunity for them to learn about where our food is from and nutrition, but also gets them excited to try what they made. Be prepared for a bit of a mess and some loss of ingredients along the way due to some hungry little monsters! I used a dinosaur cookie cutter to cut out the watermelon garnish for a bit of added fun for the kids!

We make this smoothie at least 3 times a week as it is extremely easy and fast to make and it’s a huge hit with Jaxon and Luke (no matter what eating cycle they are in) and it gives my husband and I the energy we need to raise and run after two very active kiddos!

Smoothies are great because you start with a base and you can really add in anything you desire! For example, Angela Liddon suggests a nut free option substituting coconut milk and sunflower seed butter instead of almond milk and nut butter.

    My fav go-to lately is a smoothie bowl! And I like a berry base the best so far. Frozen mixed berries, a banana, almond milk, ice. And to decorate: sliced banana, blueberries, chia seeds, hemp hearts, sunflower seeds, granola. Love smoothie bowls because you get to use up whatever’s in the house, and no matter what, it’ll taste good!!
